Aguila 4 AFC was harvested on February 22nd, 2025 from the Aguila lot in Hacienda La Esmeralda’s El Velo Farm. The code AFC stands for cool anaerobic fermented washed with climate-controlled drying. After depulping, the anaerobic fermentation (AF) was done in sealed stainless steel tanks in a cool room for 3 days. This microlot was slow dried for 16 days on raised beds in our climate-controlled room. Aguila 4 AFC has notes of jasmine, pear, honey, and orange blossom.
