Bambito Estate is a fourth-generation family farm in Tierras Altas, Chiriquí, planted at 1,800 masl in volcanic soil where cloud comes over the ridge most afternoons. The family has worked it since 1945. This lot was picked in late February, depulped and washed the same day, rested about 36 hours, then washed a second time and dried on African raised beds from start to finish. No dark room, no shortcut to a rounder cup. The clarity of expression is the reason Jiyoon wanted this double washed Geisha: wildflower honey first, floral more than sweet, then fresh plum with enough acidity to keep everything lifted, and golden kiwi as the cup cools.
