Agricola Geisha began as Gonzalo and Yrma Palenzuela's retirement project in the hills above Boquete and took third at Best of Panama in its second year of production. Two generations work it now, shade grown under plantain and avocado in the path of the bajareque mist, with Manuel Barsallo running operation, processing and quality across the farms. This lot is the kind of thing he came to do: cherry selected at 15 Brix, a 36 hour cold oxidation, then dried as a natural over 29 days.
